Post Workout Popsicle

This high protein, nutrient dense popsicle is the perfect treat to have after a summer workout. It's delicious & can be made vegan (or not)! You get fruits, vegetables, probiotics, protein, & hydration in a cold creamy popsicle that is soooo easy to make. What more could you want?

Ingredients

Makes 6 popsicles

1 peach or nectarine (I prefer white peaches)

1 cup of spinach

1/4 cup yogurt (any kind, I used coconut yogurt)

1/2 cup coconut water

1 scoop protein powder (can use plant based or whey. I used whey fruity pebbles flavored)

Blueberries (optional)




Directions

Blend contents in a blender until smooth consistency. Pour into popsicle molds until almost full if adding blueberries. Drop blueberries into the popsicle mold until full. Freeze for at least 3 hours. Can keep up to 1 month if stored in a sealed freezer bag.
