Oat Milk Banana Pudding


Serves 2

2 ripe bananas, mashed

2 tbsp honey

1 1/4 cup oat milk

1 1/2 tbsp cornstarch

1/2 tsp vanilla extracts

Pinch of salt

Wafers of any kind (I used Coconut rolled wafers), optional

Banana for topping, optional


Add mashed banana, honey, and 1 cup of oat milk to a medium pot over medium heat. Mix until combined. Mix the remaining 1/4 cup of oat milk with the cornstarch and then add it to the warm mixture in the pot. Let bubble then turn the heat down low. Add pinch of salt. Whisk occasionally. When mixture has thickened, remove from heat. Serve hot or refrigerate & serve cold. Add crushed wafers & thin sliced banana as you like.


I have a massive sweet tooth and I love finding desserts that have a healthy benefit to them. Bananas are nutrient dense & contain fiber. They are rich in potassium & magnesium making them beneficial for heart health. This recipe is so delicious! I was shocked by how tasty it was with so few ingredients & it's vegan too!
