Caramelized Apple Lettuce Cups


Serves 4

2 apples, cubed

1 tbs butter

1 tsp maple syrup

1 head of butter lettuce, washed

1/4 cup blue cheese crumbles (optional)

2 pieces of celery, chopped small

Salt to taste


Heat butter over medium heat. Once bubbling, add apples & maple syrup. Sautè until soft. Remove from heat & let cool for 10 minutes. Peel each leaf off of the butter lettuce head individually & place on serving plate. Add apples then cheese & celery. Sprinkle salt over each lettuce cup & serve.


Apples can be prepared the night before & served cold. Peel lettuce & add apples immediately before serving.
